Chicken Hot Pot

   Today's special recipe is chosen for my kids today. It's hard to feed my kids enough vegetables in their daily diet. My kids love anything with chicken. So I sometimes make this chicken hot pot since I can add lots of cooked vegetables to it. Of course, again, it's not spicy. But if you want you can certainly add chili powder (use Korean chili powder otherwise, it tastes bitter or sour) or chili paste to this recipe.






Often, you can add pumpkin, potatoes, carrot and dried shiitake mushrooms to this recipe. Today, I chose sweet potatoes, baby potatoes, carrots and fresh shiitake mushrooms in addition. If you like the flavour of dried shiitake mushrooms feel free to use them. My kids don't like its strong taste and aroma. If you use fresh ones in the cooking, the aroma and taste are milder than the dried ones.

Sweet potato is well suited with spicy chicken too. I chose not to add any chili or chili paste to this for kids but try the combination of sweet potato in the spicy version. You will be surprised by the sweet and chili flavour combination of the two.



Ingredients

1 medium size chicken chopped into bite sizes
1 carrot cut into chunks
1 sweet potato cut into chunks, put them in cold water
7 Baby potatoes, put them in cold water
3/4 brown onion
3 fresh shiitake mushrooms thickly sliced
300 ml water
some cooking oil

Marinade

6 cloves of finely chopped garlic
1/4 onion finely grated
10 cm long shallot, use white portion of the shallot in the marinade
8 TBS dark soy sauce
1/2 apple or pineapple finely grated (I used an apple)
3 TBS white wine
3 ts sugar
1 TBS glucose syrup
1 TBS sesame oil
salt and pepper

Serves 4

1. Clean the chicken pieces in cold water. Drain well and put them aside in a bowl.

2. Add 3 cloves of finely chopped garlic, 1/4 finely grated onion, the half of 10 cm long shallot, finely chopped, white wine, salt and pepper. Mix it well. Cover the bowl and refrigerate at least 30 minutes in the fridge.

3. Add dash of cooking oil into a cooking pot. Turn the gas on medium and brown the marinated chicken. Once the chicken is well browned outside, discard the oil from the pot.

4. Add 300 ml of water spread out the vegetables on top. Cover the lid and turn the gas on low and simmer for 20 minutes. 
















5. When the vegetables are half cooked, add the marinade and stir gently to mix it through. Cover the lid again and simmer for another 15 minutes.

6. Open the lid and keep simmering on low heat until the water reduces to 1/3. You need to gently stir it every now and then to make sure the it doesn't get burned on the bottom.

7. Chop the remaining shallot and add them just before turning off the heat.
